Singapore Airlines introduces over one hundred new dishes as part of major cabin upgrades.

Singapore Airlines has begun rolling out more than 100 new and refreshed appetisers, main courses and desserts across all cabin classes under its SIA Chefs’ Selection menu, developed with in-house and guest chefs and catering partners. The menu adds to existing options such as Book the Cook. New beverages, Christofle tableware in Suites, First and Business Class, and other dining and service enhancements are due from November 2026. The dining revamp is part of a broader passenger-experience upgrade covering cabins, KrisWorld entertainment, amenities, connectivity and ground services; the next-generation cabins have been delayed from late 2026 to the first quarter of 2027. The new First Class is also expected to offer companion dining for some passengers travelling together.
Examples of the new dishes include roast chicken breast and prawn cocktail; the menu also features options such as tandoor-roasted paneer and oriental-style fish with yellow bean sauce.
The SIA Chefs’ Selection menu adds to Book the Cook, which lets eligible Suites, first-, business- and premium-economy passengers pre-order main courses, including Singaporean favourites, international dishes, wellness options and destination-inspired creations.
SIA said the new collection brings together “comforting and familiar flavours, regional favourites, reimagined classics.”
SIA’s customer-experience chief said the airline reviewed the whole dining experience in response to customer feedback and changing preferences, including seasonal ingredients, cooking techniques, beverage choices, presentation and cabin-crew service.
